Using the new triple crock pot

My first attempt at a complete meal in a triple slow cooker came out great.
Ingredients
  • 4 boneless, skinless chicken breasts or thighs
  • 1 can cream of mushroom soup
  • 1 large onion
  • 8 large strips uncooked bacon
  • 2 cups chicken broth
  • 1 large bag frozen green beans (or equivalent fresh)
  • 2-4 large baking potatoes
Instructions

Main course

  1. Cook bacon until it has shrunken, but is not crisp. This will get rid of much of the bacon fat, but leave the bacon strips flexible.
  2. Wrap a strip of bacon around each chicken breast and place in cooker #1
  3. Slice half of the onion and place in a layer on top of the chicken breasts
  4. Pour the contents of the can of cream of mushroom soup over the onion layer
  5. Add about ⅔ cup of chicken broth
  6. Add ½ tsp garlic salt, 1 tsp garlic pepper, if desired
  7. Cover and set on high, reducing to low after one hour.

Green Beans

  1. Rinse the grean beans thoroughly in warm water. It is best if they are thawed, but half-thawed will work.
  2. Place the beans in crock pot #2
  3. Dice 4 strips of bacon and place in the pot
  4. Slice ½ onion and place in the pot
  5. Add 1⅓ cup chicken stock
  6. Add ½ tsp garlic salt, 1 tsp garlic pepper, if desired
  7. Cover, cook on high for 1 hour, then turn to low

Baked Potatoes

  1. Wash 2-4 baking potatoes
  2. After washing pierce potatoes liberally with a fork
  3. Brush a light coat of butter or olive oil on the potato and seal in a foil sheet
  4. Place the potatoes in crock pot #3, cover, and turn it to the high setting

Cooking time

  1. Start all pots on high for the first hour. This lets them get up to cooking temperature more quickly.
  2. After one hour, turn the main course and green bean pots to low, but leave the potato pot on high.
  3. Total time is around 5 hours

Note that nutritional values are calculated for serving of 1 chicken breast, ½ cup of green beans, and 1 large baked potato. For carb counting, use the following amounts: Chicken dish (7.14), Green Beans (5.95), Baked Potato (18). If a half potato is desired, subtract 9 carbs and 40 calories.
