We tried this as our second trial of the new Instant Pot. They were good and easy to make.

Cowboy beans made in the Instant Pot
Ingredients
- 1 lb package dry pinto beans
- 1 lb chorizo
- 1 medium onion, sliced
- 2 garlic cloves, chopped
- 1 package Lipton Onion Soup Mix
- 2 tsp dried ancho chili (mild, medium, or hot ... your preference)
- 1 tsp cumin
- 1 tsp salt
- 5 cups water
Instructions
- Clean, then soak the beans for 2 hours
- Place the Instant Pot in "sear" mode
- Brown the onions and chorizo in the pan. Normally, the Chorizo will provide enough grease. If not, you may need to add a TB or so of oil.
- Add the garlic near the end of the browning.
- When chorizo and onions are ready, add 1 cup of water, the contents of the onion soup package, the cumin, the chili powder, and the salt.
- When the soup has been dissolved, add 4 more cups of water and the beans.
- Put Instant Pot on bean/chili setting and set for 50 minutes (make sure pressure level is set to hold pressure).
- Let the pressure drop naturally at the end of the cooking time.
