Instant Pot Chicken Tacos

This is a simple, quick, and delicious way to make the filling for some yummy chicken tacos.

From frozen to eating in less than an hour with the Instant Pot.
  • 2.5 lbs boneless, skinless chicken breasts, frozen
  • 1 can Rotello Diced tomato (choose any flavor blend ... "original" works well)
  • 1 package taco seasoning
  • 1 can diced green chilis
  • 1 medium onion
  • 1 TB olive oil
  1. Put Instant Pot on Saute setting, put in the oil and cook coarsely chopped onion until it becomes transparent (stir frequently)
  2. Add the tomato, green chili, and taco seasoning
  3. Place the chicken breasts in the pot, (no need to thaw them first)
  4. Set lid for pressure and place on the pot
  5. Use poultry setting for 30 minutes.
  6. Use quick release on pressure when cooking is completed
  7. Remove chicken breasts and shred them, replacing the shredded chicken back into the pot
  8. Put Instant Pot on warm for serving
