Unstuffed Cabbage Roll

This one-pot meal is hearty and flavorful. The basic recipe will feed about 8 hungry people.

Ingredients
  • 2 pounds ground beef
  • 1 large onion, chopped
  • 1 small head of cabbage, chopped
  • 2 (14.5 ounce) cans diced tomatoes (petite would be best)
  • 1 (8 ounce) can tomato sauce
  • 2 cups chicken broth
  • 2 cloves of garlic (minced)
  • ¾ cups long grain white rice
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 tablespoons white vinegar
Instructions
  1. Heat a dutch oven over medium-high heat. Cook and stir beef and onion in the dutch oven until browned and crumbly (5 to 7 minutes).
  2. Drain and discard grease
  3. Sprinkle rice over meat/onion mixture
  4. Add cabbage, tomatoes (no need to drain, just dump the cans in), tomato sauce, chicken stock, garlic, salt, pepper, chili powder, cumin, and vinegar.
  5. Stir to mix and bring to a boil
  6. Cover dutch oven and reduce heat to simmer
  7. Simmer until cabbage is tender and rice is cooked, about 30 minutes. Stir thoroughly every 5 minutes or so.
Notes
If you like cabbage rolls, but don't want to go to the trouble of actually creating the rolls, this recipe is for you. It has all of the flavor of rolls, without any of the hassle of creating them.
