Cowboy Beans in the Instant Pot

We tried this as our second trial of the new Instant Pot.  They were good and easy to make.

Cowboy beans made in the Instant Pot
Ingredients
  • 1 lb package dry pinto beans
  • 1 lb chorizo
  • 1 medium onion, sliced
  • 2 garlic cloves, chopped
  • 1 package Lipton Onion Soup Mix
  • 2 tsp dried ancho chili (mild, medium, or hot ... your preference)
  • 1 tsp cumin
  • 1 tsp salt
  • 5 cups water
Instructions
  1. Clean, then soak the beans for 2 hours
  2. Place the Instant Pot in "sear" mode
  3. Brown the onions and chorizo in the pan. Normally, the Chorizo will provide enough grease. If not, you may need to add a TB or so of oil.
  4. Add the garlic near the end of the browning.
  5. When chorizo and onions are ready, add 1 cup of water, the contents of the onion soup package, the cumin, the chili powder, and the salt.
  6. When the soup has been dissolved, add 4 more cups of water and the beans.
  7. Put Instant Pot on bean/chili setting and set for 50 minutes (make sure pressure level is set to hold pressure).
  8. Let the pressure drop naturally at the end of the cooking time.
